I made these cookies.. followed the recipe perfectly (except the walnuts and more chips!) and could only cook them for 10 minutes because they were burning. Maybe My ovens weird and I can't put two sheets in at a time because, I made another dozen by itself for 9 minutes instead and they came out deliciously soft. Absolutely perfect. I don't know what happened the first time.. the cookies are still not bad, just a little burnt on the bottom. Maybe next time I make them they won't be. Good recipe anyhow. :)
Reply

HI -- First time I've ever submitted a comment on a website! These cookies are amazing. Here's my modifications: used Earth Balance margarine, no salt, no nuts and I ground up 2 of the 3 cups of oatmeal to make oatmeal flour. I did use quick oats (3 minute as opposed to 1 minute kind -- my neighbor insists the 3 minute kind is better for ground oatmeal). The first batch I baked for less than the 15 mintues and they are chewier but kind of crumbly. Not that I'm complaining! The second batch I baked for the full15 minutes and they were browned throughout and pretty crunchy. Both were fabulous. Thanks for the recipe!
Reply

I made oatmeal raisin choc. chip cookies today that are low glycemic and really healthy. I used all whole wheat flour, not enriched. I used Splenda instead of white sugar (cup for cup) and substituted 1 cup of brown sugar with one half cup of splenda brown sugar blend. I added a third egg and approx 1/8-1/4 cup non fat milk to the batter. (whole wheat flour makes things really dry). I then added 1 cup raisins and 1 cup choc. chips, of course, I used the 60% cocoa dark choc. chips. They were absolutely delicious. the whole wheat flour raised the fiber content, the white sugar was zero and the brown sugar was 1/4 of the original calories. Next time I will try it with the prune fat substitute. However, for a food to be low glycemic, fat is necessary. It made 60 cookies with my 2 tsp cookie scooper I got from Hilary!!! This should be healthy for everyone, and also for diabetics!!!
Reply
