The two chocolate desserts listed under sample recipes can be for Passover and The Linzer Torte you would substitute the flour with 1/2 c. potato starch and 1/2 c. plus 2 TBSP passover cake meal (and you may want to leave out the rum).  My Dad, Ernest Weil, was founder of Fantasia Confections and creator of the famous &quot;Blum&#039;s Coffee Crunch Cake&quot;, wrote LOVE TO BAKE, a pastry cookbook in which he shares the secrets of more than 150 of the bakery&#039;s most popular recipes including the Sacher Torte and Florentine Cookies.
