Your Help Please–Recipes Needed!

I want to make cornbread muffins and a Dutch (crumble?) apple pie (the kind with the crumbly mixture on top) as part of our Thanksgiving dinner. Right now I’m looking at this apple pie recipe, but would love any recommendations, as well as a cornbread recipe.

    The New York Times just had a recipe for cornbread, though I haven’t looked at it or tried it. I usually just cheat and use the Jiffy boxed mix. (gasp!)

    Hi,

    I read your blog sometimes, but I am one of those lame people who never, ever comments (Even when you beg. Because I am lame like that).

    Anyway, this pie doesn’t have a crumble topping, but I bet you could put one on. I’m totally attracted to it. Plus, it won a prize!

    Oh, no – I didn’t mean to make you feel bad. I just meant those posts on your other blog where you ask people to tell you how they found you and something interesting about themselves. I think that’s a good idea. I just always feel like I have nothing to say 🙂

    So i just emailed my stepmother to ask her for my grandma’s (Bonus: my jewish grandma) apple crisp recipe, which is- to date- the best friggin apple dessert on the planet. Your request made me remember that I TOO want that recipe so when I get, all can benefit.

    I found this recipe YEARS ago and made it right away. My dad inhaled it. I think it’s fantastic, too. I’m not sure if it’s what you’re looking for, but it’s just a suggestion! (I use pecans, not walnuts, by the way.)

    This is a cornbread recipe I use. You can make the traditional bread in a cast iron skillet or put it in the form of muffins. However, it is definitely not as tender as a Jiffy corn muffin. SO, if that is what you are looking for, this isn’t the right recipe. Just thought I’d share!

    Grandma Edith’s Apple Crisp

    6-8 tart apples (granny smith)
    1 tsp cinnamon
    dash nutmeg
    3/4 c flour not sifted
    juice of 1 lemon
    1 cup brown sugar (dark) not packed
    1 stick butter (1/2 cup, 1/4 lb) leave out for awhile for softening

    work flour and sugar and butter with fork or pastry cutter….until they are well blended and look like coarse meal..

    wash apples … remove core and seeds slice into thin slices and place in buttered baking dish

    sprinkle cinnamon and nutmeg over apples and keep pouring lemon juice over apples to prevent browning

    cover apples with flour,sugar,butter mixture and press down gently to cover apples completely

    bake at 350 F for 30 minutes or until topping looks cooked and apples appear tender

    serve hot or cold

    I may be too late…but here’s a recipe from a friend. I’ve never had it or made it, so I can’t vouch for it myself, but she swears it’s good. Her notes are included:

    INGREDIENTS:
    1 (9 inch) unbaked pie crust
    1/2 cup white sugar
    1/2 cup brown sugar
    2 tablespoons all-purpose flour
    1/2 teaspoon ground cinnamon
    5 cups Granny Smith apples – peeled, cored and sliced
    1 cup HERSHEY®’S Cinnamon Chips
    3 tablespoons butter

    3/4 cup all-purpose flour
    3/4 cup brown sugar
    6 tablespoons butter
    2/3 cup HERSHEY®’S Cinnamon Chips

    2 eggs
    1 cup half-and-half cream
    1/2 cup white sugar
    1 teaspoon vanilla extract

    DIRECTIONS:
    Preheat oven to 400 degrees F (200 degrees C.)
    In a large bowl, Mix together 1/2 cup white sugar, 1/2 cup brown sugar, 2 tablespoons flour and cinnamon. Stir in sliced apples until coated with sugar mixture. Stir in 1 cup cinnamon chips. Pour filling into pie crust, and dot with 3 tablespoons butter. Sprinkle with streusel topping.
    To make streusel topping: In a medium bowl, mix together 3/4 cup flour and 3/4 cup brown sugar. Cut in 6 tablespoons butter until mixture resembles coarse crumbs. Stir in remaining 2/3 cup cinnamon chips.
    Bake in preheated oven for 10 minutes, then reduce heat to 350 degrees F (175 degrees C) and continue baking for 35 to 40 minutes, or until filling is bubbling and streusel is golden brown. Allow to cool for at least 1 hour.
    While the pie is cooling, prepare the vanilla sauce. In the top of a double boiler over medium heat, whisk together eggs, half-and-half and 1/2 cup sugar. Cook, stirring constantly, until sauce has thickened. Remove from heat, and stir in vanilla. Spoon sauce (warm or cooled) over slices of pie.

    ***notes from experience- I find that you don’t really need 3 Tablespoons of butter to dot the apples with since you are putting 6 Tablespoons of butter into the strusel. 1-1.5 is plenty (possibly optional), and you don’t quite need all of the cinnamon chips either. It tends to bubble over with too much butter or cinnamon chips. You could try it with a deeper dish pie crust, but I just cut the butter&chips. Put a pan underneath the pie pan (bottom rack) just in case it does bubble over. You don’t need the vanilla sauce on top, but it’s kindof fun. It takes the edge off of all the cinnamon. If you are serving with ice cream, you wouldn’t need it. Sauce recipe really makes more than we ever need as some don’t want it. I love that you put streusel on top instead of an extra pie crust.

    I got this recipe from All Recipes at least 5 years ago, and it has been requested back every year since then.

    Hello Hilary,

    Maybe I can help you with a recipe for a Dutch crumble apple pie. It is one of my own and I am Dutch…so…this one would be wright. There is only one little problem: my Englisch is not so good, but I will try.

    Crumble Apple Pie with Coconut

    Ingredients:
    250 gram unsalted butter
    200 gram white sugar (we call this basterdsuiker)
    1 bag of vanilla sugar (8 grams)
    1 egg
    1/4 t.s. salt
    500 gram all purpose flour
    3 t.s. baking powder
    125 gram grated coconut
    200 gram apricot jam
    1 Tbs custard powder
    1000 gram apples light sour

    Preheat the oven to 160 °C/320 °F.
    Beat the butter with the sugars creamy.
    Beat in the egg.
    Mix the flour with the baking powder, salt and coconut and gradually blend them into the butter mixture into a crumbly dough.
    Press 2/3 part of the dough in a 26 cm ø baking tin (the bottom and sides).
    Make little holes with a fork in the bottom.
    Peel the apples and remove the core and cut the apples into little pieces.
    Add the jam and custard to the apple pieces and mix it well.
    Putt the apple mixture onto the dough.
    Add 1 Tbs flour to the remaining dough and mix it about 30 seconds into crumbles.
    Putt these crumbles on the apple mixture.
    Bake the pie in the middle of the oven in 60/70 minutes golden brown.

    You can add to the apple mixture 1 handfull yellow raisins and also some cinnamon. I guess about 2 t.s. Just what you like.
