Diet Coke Cupcakes With Vanilla Glaze

Yes, seriously, Diet Coke. And no, you can’t taste it whatsoever.
I went back to Weight Watchers (about ten pounds from goal!) a few weeks ago and have since heard a zillion people gushing about these cupcakes and decided I had to give them a try. And well, they’re not too bad. Definitely a different texture than cupcakes with the regular ingredients, but nothing to complain about.
If I ever find myself with a major cupcake craving, I might make them again. Of course, they’re not as good as the real thing.
Cake Ingredients
1 box cake mix
1 egg white
1 can Diet Coke
Cake Preparation
Remember, you are substituting the Diet Coke and egg white for the ingredients the box mix calls for–do not add the eggs, oil, etc.
- Preheat oven as directed on box.
- Beat cake mix, egg white, and one can of Diet Coke.
- Fill lined cupcake trays.
- Bake as directed on box. (I set the timer for a couple minutes less and checked on them. They were done.)
- Remove cupcakes from tray and let cool.
- Drizzle glaze over cupcakes, allow glaze to set.
Glaze Ingredients
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla
Glaze Preparation
Mix powdered sugar, milk, and vanilla. If glaze is too thick, add more milk.
Note: If you’re using a white or yellow mix, use Diet 7-Up or another clear diet soda.

Those turned out beautifully! I’ve done it a few times with good results, too. Lemon with Diet 7up, red velvet with Diet Coke, etc. The glaze looks great!
I am a little worried! It doesn’t taste like fake sugar at all??
How many points?
I’ve had lots of these WW dessert recipes made by my MIL who has been on WW for probably about half of my marriage. Last Sunday she took frozen peaches and raspberries, sprinkled a box of cake mix on top and them pour diet ginger-ale over it I think. It wasn’t bad. Pretty good actually. 5 points though which is quite a bit to spend on dessert.
Looks interesting. I will have to try it. Do you know how many points each cupcake is?

Rachel, nope. The flavor is just pure chocolate cupcake.
Paula and Essie, mine are 3.5 points, with the glaze, but it depends on the box mix you use. Use the nutritional info on the box the for the mix only. I counted the glaze as like half to one point, because there’s not much to it and I didn’t use a lot.
OK – I’ve made this cake version before but with a white cake mix and diet sprite. It was pretty good, but yes… you can’t taste the pop at all!
I’m down almost 25 pounds on Core. I’ve been baking and not eating – amazingly!
I’ve done the diet drink cakes before … you’re right, def. not too bad if you’re craving something sweet!
Another good low-fat baked good: Mix an angel food cake mix with a can of crushed pineapple (including the juice, I’m thinking it’s around a 10 or 14 ounce can, not the little one) and bake in ungreased muffin cups, around 18-20 minutes.

We make these in our group but without the egg white. Try filling the middle of the cupcake with coolwhip free. The cupcake is just 1 point.
Not a good idea to heat/cook anything with nutrasweet, such as diet coke….if you are going to eat these, best not to do it on a regular basis.

Certainly sounds like an interesting mix. Can’t say myself i ever thought to replace the box mix with diet coke. I will have to try all of this and i will report back my results.
